Blend with pineapple juice, lime juice and brown sugar and reduce a bit.
Rub rack of ribs with salt/garlic/chipoltle powder and smoke/bake in oven at 225. After 4 hours start to glaze with sauce.
Al Pastor Ribs
We use them in a crema for fish tacos. Chop, blend with creme fraiche and a squirt of lime juice to whatever heat level you like. Better if you let it sit overnight.
Chicken tinga
also good to blend in mayo like above (crema) for dipping sauce for quesadillas, steak bites, etc.
smoky/spicy up your enchilada sauce
puree and add to refried beans

My first go to would be Rick Bayless for adobo sauce, and just add my own smoked jalapeños (I’d personally use smoked serranos tho)
Mark Miller’s cookbook “Coyote Cafe” has a recipe for chipotles in adobotjat I used back in the nineties.
