Chicken-Rotini Soup and Sable-Arugula Salad with Pouilly-Fuisse

Tonight’s supper, on a very cool (under 50F), eventually cloudy day, was a rich chicken, vegetable, & rotini soup with a small salad of arugula dressed with a Belazu balsamic - Meyer lemon olive oil dressing seasoned with onion powder, lemon peel, chervil, & sea salt, topped with thicker slices of sable with a beet horseradish - crême frâiche mixture. It was both pretty and tasty. All was enjoyed with a 2002 Domaine Scomaize-Michelin Pouilly-Fuisse ‘Ampelopsis’ - medium yellow-gold in color; pleasant nose and flavors of stony pears & citrus; good mid-palate of fruit and barely adequate acidity; and a medium long, good fruit finish. The P-F had barely enough acidity to work with the salad; but it was very good with the rich soup. I had probably three or four tastes after the salad, most tastes were after the soup following the salad.
