??I am making chicken cordon bleu and I do not have the traditional wine to pair with it however I do have sauvignon blanc from bedrock and desire line I also have cinsault and trousseau from sandlands as well as falkenstein lauer, ludes reislings any thoughts on what i should choose?
From your excellent selection, I’d recommend going with either of your Rieslings (Falkenstein or Lauer) as they would make a wonderful pairing with chicken cordon bleu. The bright acidity and subtle sweetness of Riesling works particularly well with the salty ham and rich cheese inside the chicken, while having enough body to stand up to the breaded exterior.
If you prefer to avoid any sweetness, the Sauvignon Blanc would be your next best option. Its crisp acidity and citrus notes would cut through the richness of the dish nicely.
While Cinsault and Trousseau are lovely wines, they might be a bit too light and delicate for this particular dish compared to the traditional fuller-bodied white wine pairings.

It’s really an American dish that pays homage to Swiss schnitzel. There is nothing European about it. That said, a white with a bit of oxidation like fino sherry or Lopez DH, would be nice. Champagne and fried chicken is a classic. I don’t know why cheese would change that.

We don’t do that here on WB. The right pairing has to be something like Brachetto, Furmint, petit manseng or craft beer.
