About a decade ago I had some leftover Egly-Ouriet and started a Champagne Vinegar with a mother. It’s wonderful in salads and I’m convinced that the quality of the Champagne impacts the quality of the vinegar. So…every so often (maybe once or twice a year) we have some leftover Champagne…and I add to the stash. I do the same thing with the red wine vinegars that I’ve made. It’s mostly Bojo…but there have been a few Pinot Noirs I’ve added into the blend.
Now back ordered until October. I hate you all (LOL)
