Butterbeer

Concocted for Harry Potter fans, it sounds like it’s a bit sweet and tastes like Butterscotch.

I suppose it would be controversial if I said that’s not SUCH a far cry from some of the brews in the British Isles.

I’d be more interested if there were a version containing alcohol.

1 cup light or dark brown sugar

2 tablespoons water

6 tablespoon butter

1/2 teaspoon salt

1/2 teaspoon cider vinegar

3/4 cup heavy cream, divided

1/2 teaspoon rum extract

Four 12-ounce bottles cream soda

As you might imagine, my 14 year old daughter is dying to go to Universal and have this. Unfortunately, she was at the park a week before they opened this section, so she missed out then.
