I just bought another new grill and wanted to christen it right so I started with Bison burger the recipe is from Keller basicly just meat and S&P with some redwine braised onions. The Burgers were amazing lean and clean in flavor. The other componentes of the burger came thru nicely and highlighted the flavor od the bison. We paired it with the Chat. D’Esclans Whispering Angle. Yesterday in IL it was 91 with high humidity. During grilling I almost drank a bottle of this myself cool and crisp with red fruit and minerial that refreshed and revide the cook and made for a wonderful pairing with the burger.
