Yes - tripe and snout, more or less. Callos y Moros. It’s a very good version, which I highly recommend.

Looks so good, Sarah. Ganbara was so fabulous when we were there a few years back. Lunch as we ate around and then returned for a late dinner downstairs.

I thought for sure I’d be back since 2023 to do it again, but I don’t get to pick all the trips in my house! :grin:

We hit Tamboril right around 7:45 last night and were able to get seated right away. I mentioned before that this is from the same owners as Ganbara, and it shows in the quality of everything. Warmly recommended.

I can’t express how much I love those pimientos (red)! Brought home a couple jars, now I need to find a source for them here.

Are you talking about the piquillo peppers, Alan? There are many many gourmet/interesting food items that are difficult to find in Boise. Thanks to our large Basque population, piquillo peppers are not one of them. We use them for all kinds of stuff (and stuffing them with tuna and capers and shallots is one of my favorite uses).

Yes! They are ubiquitous there, and we had solo plates of them several times, a couple times they were just exquisite, being plancha fired on the grill, and seasoned - probably with the local salt. You’ll have to tell me what the best brand you’ve found is.

If one likes piquillo peppers, if one hasn’t yet, I’d recommend trying out some pimientos del cristal.

I have a 1:00 res at Elkano on 7/20 a Monday. We are driving from Bilbao to SB stopping in Getaria for lunch. Any advice on where to park and how early should I arrive to find said parking?

There is street parking. I’d leave 15 min.

Adding - we usually find a spot on the street running up the hill alongside the park.

Just be careful, if you go through the town (because it’s your first time there lol), and have to turn left to hopefully go up and around, your apple maps might take you way the crap out in the country - which is a lovely drive, but doesn’t take you back into town lol. If you are coming in from the west, along the water, best bet is to come into town, then when you go through the little divided section with the small boat in the middle, take the first right. It’s kind of a steep hill but there is a lot of parking on both sides up there. Easy to walk down, and there are escalators to take you back up most of the way if you need them. You can see it all on google maps street view.

Galtzagorri … a traditional basque cider joint.

Lunch was a three course very affordable, traditional and the cider comes off the cask on the wall. Refill at your leisure. Make sure to aerate the glass.

Really amazing experience.
