Same here. Debated cutting the molds based on another message board but decided against it after reading the another entry by the author of the blog linked to in the OP. He did not advise against it, but based on his results, I did not think cutting was necessary. I would have a liked a bit more carmelization but I got pretty good color and the texture contrast was good.

I followed this http://chezpim.com/bake/canele-recipe-method. The only place I differed is that my batter sat for an extra 12 hours due to lack of oven space during the Thanksgiving cooking marathon. There is a link in that blog to him testing silicone molds. I also read that before cooking. It turned out really well but coating the silicon molds was a bit of a pain. I actually redid it twice before I felt good about the results. I will definitely be making these again. Delicious.

I just made 100+ of these for our holiday party using silicon molds. It took quite a few hours even making 24 at a time. I used the Freshware silicon molds.
I changed the process a bit because the wax/butter mixture will NOT adhere to the silicon using his method. That method is heating the silicon molds in the oven and then brushing on the wax/butter mixture. I found it far more effective to have the molds at room temperature and to brush on on the just fully melted wax/butter mixture. I got the perfect coating without having to do it twice.
OK, I was watching Mike Colameco’s show on PBS this past weekend, and he was doing pastry chefs. He was interviewing Jansen Chan at Oceana – and near the end, someone went by carrying a TRAY OF CANELES. I said “wait, what, stop???” but nothing. Jansen Chan sounds pretty brilliant FWIW, wonderfully creative. Is he still at Oceana? I don’t think so…
making a dozen tonight, half with molds brushed w butter, half w beeswax/oil. We will see.
