While recently in Amsterdam, I had the pleasure of sampling the best frites I`ve ever had from a stand called Vleminckx Sausmeesters. These Belgium made frites are cooked in vegetable oil and served with a multitude of sauces, the traditional Dutch choice being mayonnaise.
My #2 vote goes to La Rotisserie du Beaujolais in Paris where these pomme frites are cooked in duck fat.
#3 comes from The Hitching Post Restaurant in Buellton, CA [outside Santa Barbara]. Frank uses lard for those wondrous fries.
Wurstkusche in Downtown L.A. Duck fat twice fried, insanely crispy but yet so tender inside. with a myriad of dipping sauces. Also the best gourmet sausages anywhere. We go after the our Sunday afternoon LA Phil concerts as do many of the musicians .

It might sound crazy, particularly because they are now a bigger corporate chain in most mall Food Courts, but Nathan’s fries are probably my all-time favorites.

If you’re in LA looking for fries, you might also want to check out the “Death By Duck Fries” at Beer Belly in Korea Town. Duck fat fries topped with Smoked Salt, Sweet Onion Sugar, Duck Skin Cracklins, Raspberry Mustard, and Duck Confit. They are absolutely spectacular if you’re a fan of the canard.
I like mine the best. They are twice fried (first at 225F, then after cooling finished at 365F). I serve them with either homemade mayonnaise or spicy catsup.

Glad that you liked Vleminckx Sausmeesters. My favorite frite in tout le monde. Anyone who hasn’t eaten them is talking about second place or worse. The perfect frite. At the same level as the pommes Anna at Chez l’Ami Louis and the mashed potatoes at La Table de Joel Robuchon as the best potatoes I’ve ever eaten.
