Congratulations and have a great time. My wife and I were hoping to go in May, but my wife needs some nonserious surgery so we will have to postpone overseas travel for a while.
Of the restaurants you mention, I have been to La Dilettante, but only for lunch. Nice casual place, but not the same thing as Caves Madeleine was when LoLo was there. I would recommend for lunch, but if you want a wine bar for dinner I would recommend Maison du Colombier.
An excellent small place in Beaune for dinner is Relais de Saulx.
Caveat: I was last in Beaune in 2018, so things may have changed, esp. given all that everyone has gone through in the last two years.

My experience with La Dilettante (pre-pandemic) is that lunch must be reserved well in advance. Dinner may be somewhat less in demand but reserve as well. I’ve spent some very enjoyable evenings there. It’s more grazing food but you can cobble together a nice meal. The wine selection is terrific and priced well.

Don, To help answer your original questions … I asked for input from a friend who lives and works there, here is what she just said:
"La Superbe - I have not been a lot but it’s got a good reputation, La Dilettante - good French pub food with excellent naturel wine list. Fabienne also sold her pub she took over, she’s opening a new place in Dimigny, 5 minutes away from Beaune. Not sure when the opening is. L’Expression…hard to be objective, I work there! To give you an idea… Generous, excellent wine list with all prices, hey! Jeremie and Damien are friends … they have enormous respect for each other and learn from each other everyday. Damien expresses his charming and excellent food in the kitchen and Jeremie went wild in the cave. They are both generous, love to eat and pair the wines in their beautiful behind glass, modern cave. The atmosphere is subdued and cozy, comfortable and welcoming."

Thanks for that information. I have my front desk guy in Beaune making a lunch reservation in May for me when they return. L’Expression looks fantastic!
We ate at L’Expression in September at the recommendation of the team at Marchand-Tawse. We were not disappointed — the cooking was very sharp and modern, but with a very traditional backbone.
Wine list is deep in some producers but I found prices a bit all over the place. Likely a function of it being a newer restaurant and not having an old cellar of stuff acquired 15,25,30 years ago at prices way below inflation. (FWIW we had an 05 Taillepieds and 08 Clos Vougeot, both from De Montille - one of the deeper producers on the list.)
Decor and ambience are very cool / modern / minimalist.
Service is warm.
