I will be in Beaune by myself for two days in December. I’m looking for a clean, no-frills place to sleep. Less cash = better food & wine. Close to the center of town is great but I don’t mind walking around. I don’t plan to have a car, though (arriving by train). Any recommendations?

At the top of the clean, no-frills category for me is the B&B hotels “Beaune Sud 1” where you can have a clean room, tv, wifi and a “real” bathroom (i.e. not a plastic one like in the B&B Beaune Sud 2 hotel) + a locked parking for ~40 euros (depending on dates). Breakfast is extra for ~6 euros but I never take it there (easier to go to a local bar for a coffee and buy a couple of fresh croissants from a boulangerie). It’s 5 minutes away (walking) from a large supermarket to stock up on stuff like bottled water, and about 20 minutes walk away from the restaurants (on the south side of Beaune at least, where most are anyway like Les Tontons, Ma Cuisine, Caveau des Arches and so on) and from the train station. It’s in an “industrial” area but the streets are safe.
When I go back I plan on staying here: http://www.hotel-cep-beaune.com/uk/index.php. One person in my group last March stayed there. He has been going off and on for over 15 years. He prefers Le Cep to all of the hotels from his experiences. The rate is highly negotiable. I think he used Kayak to make the reservation.
Flying into Orly instead of CDG gets you about an hour closer to Burgundy.
I am sure you know the names of the more famous restaurants. We went to all of them, but the two restaurants I would go back to first would be:

Wherever you stay, have your concierge make reservations for you, they can get tables when you might not be able to [we even got private dining rooms because of the concierge calling]. A few euros tip - goes a long way…

I have stayed at Hotel le Cep twice, and can enthusiastically recommend it, but a “no-frills place to sleep” for “less cash” it is most definitely not.
I also enjoyed le Cep. Great location, and the restaurant in the hotel (when I was there 4 years ago) had the best wine-by-the-glass program on the planet (Rousseau CSJ, Coche, Roumier, etc.).
We stayed there this summer and this is a great recommendation for what they are looking for. Very nice for the price and very wel located. I don’t think I would call this no frills and cheap, however. Rather, I would call it moderately priced and very good value for the quality and location.
Agreed. Le Cep is a very nice hotel, but it is not cheap.
Le Cep is not cheap [so I missed the point of the post], but I am certain you can get a room closer to about 30% less than advertised. You would be hard pressed to find a better price to quality ratio. I spent as much as my friend did for Le Cep as I did for another hotel. I had spotty amenities including poor advertised WIFI, which I needed - I ended up in Le Cep’s lounge a lot pirating their access.
That’s 2 reccs for Caves Madeleine for dinner. Great place!
Late response, but we stayed at Hôtel de La Poste, immediately outside the walls and enjoyed it.

There’s also the Best Western Porte St Nicholas, on the northern edge of town. If I remember correctly (it’s been a while), it was pretty cheap, clean, with wifi and within easy walking to the center of town (5-10 minute walk).

We hired an apartment walking distance from the train station. Very well appointed and cheap. Sits above a restaurant and bakery. 5 minutes walk to town.

I stayed at the Hotel Belle Epoque.
Just outside the city walls on the road to Pommard. Nothing fancy but comfortable and relatively inexpensive. Good service, too - I left a credit card at a domaine in Aloxe-Corton and one of the receptionists picked it up for me.
Les Jardins des Lois a couple of years ago was excellent. Its a B&B and about a 5 minute walk to the center of town. I would definitely stay there again.
