Barbecue Porn: Smoked Maple-Chipotle Wet Rubbed Veal Roast, Sausages and Root Vegetables

Despite my previous food porn posts on making my own Montreal Style Smoked Meat and Chicken and my ten course home tasting menu, this board still thinks I only ingest sweet wines and food (which is mostly true [cheers.gif] )so once in a while I have to do some savory food porn to remind everyone that man does not subsist on sugar alone, tempting as that may be.

Today was a perfect Fall day for a barbecue – bright and sunny but very cool with a high of 60 degrees Farenheit. Yesterday, I bought some artisanal sausages and a veal roast from the St. Lawrence Market downtown as well as some root vegetables from the Farmer’s Market and decided to smoke them today on the BBQ.

For the veal roast, I made a Maple Chipotle wet rub consisting of maple syrup, salt, pepper, chipotle powder, paprika, garlic powder, onion powder, coriander seeds, dried mustard, dill seed, ground black pepper, thyme, and rosemary. I rubbed this all over the veal roast.

Next it was on to the 'cue. I placed the veal and the sausage on the top rack and the root vegetables on an elevated cookie sheet. The sheet was elevated simply by placing a BBQ rib holding rack accessory underneath the sheet to hold it up.

I smoked everything together for a few hours using Jack Daniels barrel chips and then removed the meat and grilled the vegetables to finish. I then brought it all inside and let the meat rest before slicing it. I cut the vegetables into chunks and then mixed them with a dressing of EVOO, balsamic vinegar, Himalyan pink salt, black pepper, herbs – oregano, basil, tarragon, parsley, rosemary, thyme – French Dijon mustard with coriander and chili pepper flakes.

P.S. For the record, I should point out I am drinking an after-dinner digestif of my homemade Pineapple Marnier with a Batman ice cube in it so it’s not like I’m completely giving up sugar. efer to my previous booze infusion and ice cube threads to know what I am talking about.
