Tonight’s supper was slices of the sable we brought back from Las Vegas on Mr. G’s Arugula with heirloom cherry tomatoes, dressed with Belaszu Balsamic and Meyer Lemon Olive Oil seasoned with onion powder, celery seed, lemon peel, sea salt, and chervil. The rich, oily sable slices were topped with a mix of beet horseradish and crême frâiche. The combination was very tasty with a 2006 NORA Albariño - a little bit old Albariño; with enough stony fruit to pair well with the salad; barely adequate acidity, and a medium long fruit finish.

This sable came from Harrie’s Bagelmania in Las Vegas NV. It’s some of the best we’ve ever had, very rich in flavor and smokiness. It was great with bagels & cream cheese at Sandy & Ken’s and was super on the arugula salad.
