Artichokes & Hollandaise

During a minor snow storm on Wednesday I caught a Laura Calder show “French Food at Home” on the Cooking Channel. She made a brown butter hollandaise sauce to top artichokes. This evening I decided to try the recipe and I felt this one is worth sharing with others…Recipe here … http://www.cookingchanneltv.com/recipes/laura-calder/artichokes-with-brown-butter-hollandaise.html . I have not made a hollandaise before and the brown butter made first gives a nice caramel note to the sauce and since I was making fresh local striped bass for the main course I used the hollandaise on that as well. The wine with the bass and artichokes was last nights 2010 Henri Bourgeois Le MD and the start of a 2010 Huet Le Mont sec tonight. Both wines went well with the dishes but I have to give the acidity of the Le MD an edge with the Hollandaise sauce. A dry bubbly or a chablis would have been the sweet spot for these dishes. Kudos to Laura Calder for her show as it seems the dishes have finesse to them but at the same time are accessible to home cooks like myself. She has many recipes on the Cooking Channel website that are worth trying…Gary

There is a small hotel where we sometimes stay in the city, and the cafe downstairs makes a kind of eggs benedict with sauteed artichokes and wild mushrooms under the eggs and hollandaise. It’s amazing!

Sounds like a terrific choice of ingredients for breakfast. I mentioned your benedict recipe to my spouse and she perked up and is suggesting I get into the kitchen and give it a shot…maybe I should have shared the recipe later in the day…Cheers, Gary
