Anything but Burgers - Ground Beef Recipes??????

Let me know. I am running out of ideas. I have a freezer full of this stuff.

Hamburger Stroganoff
1-1/2lb Gr beef
1 medium onion chopped
1 dozen mushrooms sliced
1/2 cup fresh parsley chopped
1 can Cream of Mushroom soup
1/2 pint sour cream
Salt and pepper

Saute onions, add beef and brown. Drain off fat. Add mushroom soup and mushroom slices and simmer until mushrooms are soft. Salt and pepper to taste. Add parsley and sour cream. Heat through. Serve over white rice.

Sloppy Joe’s
1lb gr beef
1 medium onion chopped
1 can tomato soup
1 tsp poultry seasoning
1 tsp dry mustard
1/2 tsp thyme
1-1/2 tbsp red wine vinegar
Napkins

Saute onion, add beef and brown. Add remaining ingredients and simmer 10 minutes.
butter and toast buns under broiler. I use mayo and a slice of cheese which of course is optional.

My kids (now adults) still ask me to make them when they visit.

Thanks for the replies. I should have stated that I have tackled about the top 30 rated recipes on allrecipes.com. I am looking for something unique that I have not tried or made before. Bob, I need to google “Sugo de carne” and find out what the hell that is. Keep the suggestions coming. Thanks

Having been a single Dad and raising 2 children and an ex-wife I learned to do hamburger many ways. Most of my recipes originated from my Mom andt I have found they are way better than most of the same name. There are a lot of nasty renditions that I have had to endure at outings, chili cookoffs, friends homes… that I would like to forget.

Anyhow, here is our Chili stew FWIW.

1lb ground beef
1 cup onion
1 clove garlic
4 tbsp butter
1-1/2 Tsp salt
1/2 tsp pepper
1/2 tsp chili powder
1/2 tsp celery salt
1/8 tsp cayene
Dash marjoram
Dash thyme
1 28oz can whole tomatoes w/liquid
1 15oz can kidney beans w/liquid

Saute onion and garlic, add beef to brown add dry ingredients, then tomatoes and kidney beans with liquid. Simmer 1/2 hour. I serve this over white rice as well.

Have you done the Asian Lettuce Wraps? Those are tasty.

You could do cabbage rolls. Most people use pork, but I don’t see why you couldn’t make a version with beef.

Chili is always good. I like making big quantities, and then freezing in lunch size portions.

Stuffed onions (these are a bit time consuming, but totally worth it)

  1. Hollow-out an onion, leaving two layers of onion around. Hollow-out from the end opposite of the root. Do not remove root end, as you need it to hold the onion together.

  2. Pre-heat oven to 375.

  3. Mix the ground beef with one egg. Add-in whatever else you want.
    Some ideas of what to add to the ground beef (mix and match; by no means am I suggesting that one add all of these):
    onions
    bread crumbs (seasoned or plain)
    bacon
    sausage
    herb(s) of your choice (I’ve found sage and thyme work exceptionally well)
    cheese (i like a smoky gouda here)
    butter
    anything else you can think of

  4. Stuff the hollowed-out onion with the ground beef mixture.

  5. Place onion(s) in a baking dish, and bake at 375 for approx. 45 minutes.



    These are insanely good.

we do something similar rather than onions stuff red peppers.
Cook rice, cook ground beef, combine with cheese, garlic, herbs, whatever seasonings you want.
cut tops of peppers, fill with rice/beef mixture, place top back on and cover with whole peeled tomatoes (not sauce)
Bake in oven covered with foil, I think around 400, for about 45 mins, take off foil and throw a bit more cheese to get nice and crusty.

Thery’re also real good warmed up next day or for lunch.

chili, meatloaf and sugo bolognese are the other main things i use ground beef for.

Nice! there are some good ideas coming in, I have not tried before. I’ll post pictures as I tackle them one by one.

P 205 of Hazan’s Essentials of Classic Italian has a recipe for chicken liver sauce that uses some ground beef. It won’t use your ground beef up quickly, but is delicious.

At the winery there is a recipe for albondigas - mexican meatball soup. Nice on a cold day for lunch. I’ll get that when I am there.

Forgot about stuffed peppers. Our recipe leaves out the cheese and use green bell peppers. We mix the cooked rice with raw beef, salt and pepper and fill the peppers. Then we use tomato soup in the dish around the peppers before baking. Serve with mashed potatoes. When you combine the meat mixture with the bell pepper flavored soup over the mashed it’s heaven.

Cabbage rolls for sure. We call them Galubki. Rice, onion and gr beef rolled in cabbage leaves and put into a dutch oven on a thin bed of drained sauerkraut. Cover with stewed tomatoes, more sauerkraut and more Galubki, more tomatoes, more sauerkraut. Bake 350 for 2 hours. This is a traditional Christmas entree for our family.

Speaking of traditional food, (for me anyhow) maybe you can make some piroshki. We make ours appetizer size (about the size of a chicken egg) and serve them as such.

I was thinking (freeezer full of beef) you wanted something to use it up quicker.

Andrew mentioned albondigas. We had them frequently when we were in Spain. My understanding is that because of the “AL” beginning you can tell this was a Berber dish (Arabic, Algebra, Alcohol, Alchemy). But I think the Spanish version is often made with pork. You have these tender spicy meatballs in a tomato sauce, served as one dish at a Tapas meal.

There are meatballs all around the world. In Iran you have Kufte and Kubide, one of which is formed around a flat sword and cooked over a fire.

At any rate:

Beef Albondigas

1/2 lb ground beef
12 ounces chorizo sausage
1 egg, beaten
1/2 cup breadcrumbs
2 tablespoons parsley
2 garlic cloves, minced
1 teaspoon Tabasco sauce
vegetable oil

1Combine hamburger and chorizo in a large bowl.
Add all other ingredients, but do not over-work the meat.
2Form into small, bite-sized balls and
fry in hot oil until brown on all sides and done through.
3*Note: These can also be baked at 400 F for about 18 - 20 minutes.

Here is a Persian recipe. Berenji means “with rice”

Danish Frikadeller

1 lb. ground beef
1 slice bread soaked in 1/4 c. milk
1 egg
1 tsp. salt
1/2 tsp. sage
1/4 tsp. all spice
1/8 tsp. onion salt
dash pepper
1 tbsp. flour
Combine all ingredients thoroughly. Form into meatballs approximately 2" in size. Fry in skillet over medium heat until done.

Once again – if you have Asian markets around you can get dumpling wrappers and make pot stickers from scratch. Those are also mostly made with pork, but they are basically meatballs with a thin layer of pasta around them, so the meat could be anything. Same thing for ravioli…
