Peal, half and core. Gently braise/poach in any kinda white wine +/- 10-15 minutes in pan on stove until soft. Slice each half on bias and fan on plate. Spoon on cheese sauce.
Cheese sauce (per pear half): Get a small heavy skillet nice and hot, not smoking hot but good and hot. Drop in from 1-teaspoon to 1-tablespoon (however much you want really) crumbled stilton (or any blue cheese of your choice). As it just begins to melt down stir in a splash of heavy cream. Stir for another second then pour over pears.
A nice garnish to go on top is toasted nuts; pecans, walnuts, pistachios et al your choice.
They don’t have the texture softness to cook with in my opinion. Just best eaten raw. Share with others as not many people try them due to the pricing. At the local Asian market a box of Korean pears was $32! 6lbs. I occasionally bring some to work and most of the people have never had them as you don’t find them in regular markets.
I think you are thinking of Asian pears in general. From what I understand “Korean pear” is a type of giant Asian pear that was made popular in Korea, I’m not sure what the actual variety it is but it’s from a specific one, so there wouldn’t be varieties of them. At the market today i saw korean pear, brown asian pear, asian pearr and a Japanese pear (exact name i forget). The sizeof the Korean pear is much larger than your typical Asian pear. $6 is high, typically it’s about $3~ at the market for unboxed loose pears. Typically the boxed, wrapped ones are immaculate and gigantic. It’s for gift giving
