Please forgive this off-topic note, but I wanted to see if you might be interested in a limited shipment of extraordinary organic extra-virgin olive oil from a small winery in Chianti Classico.
Earlier this year, I tasted a number of oils at the DOP olive oil session at Anteprima Toscana—and the standout came from Fietri, a tiny hamlet high in the hills above Gaiole in Chianti. I’ve known Valter at Fietri for years, and when I returned to taste again, I discovered that what I had tried originally was a hypothetical blend. After sampling the individual vats, I selected the entire first-day harvest, 40 liters of a deeply vegetal, peppery oil made almost entirely from Moraiolo olives. It’s bold, complex, and ideal as a finishing oil, especially for meats, beans, and soups. The yield was just 8.5%—less than one liter per tree.
To complement this, I worked with Valter to create a second oil: a rounder, fruitier blend of Moraiolo (80%), Frantoio (15%), and Leccino (5%)—ideal for broader finishing use.
The single-harvest oil is packaged in 250ml tins, and the blended oil in 500ml tins. The packaging is simple, but the oils speak for themselves.
While the oils aren’t labeled organic due to certification timing, I hurried this shipment along in light of recent changes, I can assure you they are organically grown in the middle of a forest at nearly 600 meters elevation—pure, high-altitude Chianti Classico. It is a pristine, almost savage environment and the oils really do speak of this place.
