A large pan gamechanger

Has anyone seen a large carbon steel pan with a lid? If I’m getting persnickety, I shouldn’t have rivets and be forged with the handle.

15 people, give or take. ~25 lbs of sauerkraut and about 30 lbs of smoked and cured meats. Proper choucroute should be warmed and cooled at least 6 times and this pan just fits in the Electrolux steam combi oven.

Probably too late but I just saw this. I have both a Butterpat and a Field and love them both. Each are highly recommended. I never understand the love for cast iron until I got these pans.

I like Stargazer quite a lot. Considered Field / Butterpat / Smithy / Finex, but went with Stargazer due to lower pricepoint and very good reviews. It’s great. Probably can’t go wrong with any of them, though the weight on Finex is kind of insane.

I’ve seen quite a few videos on the above mentioned pans. I think if I ever replace my lodge I’ll go with something like that.
