A back vintage Dauvissat (Camus) Forest

2007 Dauvissat-Camus Chablis 1er Cru La Forest
This bottle was in the right place at the right time; a beautiful stage in its development, maybe its apogee. Dense and viscous for a Forest, the palate is much more generous than the nose. Typical Chablis oyster shell, lemon, iodine; slight reduction. Atypical honey, apple and maybe lanolin like an older chenin blanc. All in all, an enjoyable wine tonight.
My last bottle of the Rene & Vincent version of this was horribly poxed.

I love the 07’s that are healthy (and the record has been far better with them than 08). I would argue that the honey and apple are typical as well. There are several good vintages since, but this is the last totally typical one for me.
