2017 William Fevre Chablis - in praise of the simply spectacular

I’m marveling at how spectacular this simple, inexpensive Chablis is, truly.

The balance of fruit and texture and acid is just first class. Juicy, crisp, great spunk without that searing acidity Chablis can sometimes have, overwhelming the individual with super-sour lemon at all times. Herbs, sweet grapefruit, hint of white pepper. It’s so balanced, it finishes elegantly and gracefully.

100% this would be a desert island wine for me - I wish I had more, and only see it available for sale in other countries…

If I can find a legit good coupon I might take that on - Total Wine has it for $9 less, however…

Paired PERFECTLY with a more hearty version of Italian Wedding Soup, sort of - risotto with spinach and homemade pork meatballs - FIRE.

Lovely post Todd. Fevre makes great, often underrated wines. The Vaulorent is a particularly great value.

Damn, the last time I bought this I paid 11.90€. How old can one feel at 38? Really remember liking the wine though.

Thanks for posting this, Todd. I don’t think we have access to the 17 anymore, but we do get the Fevre regular cuvee in here quite often. 17 is starting to push for my favourite white Burg vintage of the last 20 years.

There is a Domaine and a non-domaine straight Chablis. Both are good, but the Domaine is generally better.

This pops its head up at Costco sometimes for around $32 along with the negoc label for a bit less.

Nice note and good pairing. Now please stop talking about Chablis, it’s my Fight Club, and there are a bunch of great producers with a long track record that are not Dauvissat or Raveneau and never really shut down and cost under $50.
