1978 Ridge York Creek Cabernet Sauvignon

Last night for dessert, we had truffled popcorn with a 1978 Ridge York Creek Cabernet Sauvignon - fill at the top of the shoulder; cork fully saturated, but extracted intact; good currant - cherry fruit, fully resolved tannins, barely adequate acidity, with a medium long fruity finish. We’ll have to have old cabs and popcorn more often. It was quite enjoyable.

Such a glorious year in California, I have rarely been disappointed.

I don’t have the '78, but I do have an '84… and with truffle popcorn…did you use truffle salt or what???

We added black truffle powder to the salt we put on the popcorn as well as to the butter we used.

Air popped?

No, popped in a little oil on the stove. I use a large Calphalon frying pan, with a domed glass lid.
