Grilled calamari & shrimp w / salmoriglio dressing.

MIDDLE COURSE
Paccheri (fresh large tube pasta) with braised oxtail ragout

Main course (family style)
Grilled rib-eye arugula & rosemary infuse oil
Side - soft polenta/creamy spinach/roasted fingerling potatoes.

Dessert - Profiteroles

Anything south of Roma including Sicily. But are we including Corsica and Sardinian wines?

Hi. I think the menu sounds wonderful and look forward to it.

My vote on Corsica and Sardinia is sure, why not? What will be interesting will be to compare is how the different wine makers manage the high alcohol potential in these wines to offer a balanced product. Also, some interesting options to taste indigenous grapes.

  1. 2013 Occhipinti Il Frappato Terre Siciliane - Sicily
  2. 2011 Ciro Sergio Arcuri Aris - A Calabrian wine made from 100% Gaglioppo. They use a special local yeast. This wine has not gone through filtration or fining and there is a lot floating in it however I have been assure by the buyer that it will be indiscernible on the palette. Bring your adventure hats.

All for including Corsica and Sardinia.

Stopped by Zio w/Tony after our last offsite and the food and hospitality were awesome - excited to go back!
