Love the Ki No Bi. First tried it in Japan in 2019, and I seek it out here when I can.
On tonic, I enjoy the original Q Spectacular. I usually cut it with a splash of soda to keep the sweetness in check.

Oh interesting - never tried this before. Do you add sparkling water then to keep the carbonated part of the tonic water/to dilute?
If I order a g&t while out, I usually ask for half tonic, half soda. A Sonic.
I also buy the light versions of Q and Fever Tree tonics.
Good thinking will try these approaches!
Yes, it takes some figuring out because you have to experiment with what ratio you like first with the water/club soda and syrup.
When you make it you do it opposite though to keep the carbonation. Mix the Gin and syrup with ice then top with soda.
Many of course get too fancy for themselves and add too many flavors. You are using a premium gin so I want something quinine forward with little sweetness that lets the gin speak.
It was fun to play around with but a bit of a hassle and ultimately the low sugar versions just suited me better since I don’t use as much as a GT calls for anyways.
Jonathan won’t allow light tonic in the house. We use Fever Tree, occasionally cut with soda.
Curious Why?
The replacement with natural fructose? Light to me also has a slightly more bitter profile because of the fructose which I also enjoy.
I personally dont want to mix half soda with good tonic as that just cuts the quinine profile in half.
…but I never have a problem with a straight up Martini if there is no light around!
Must be tough waiting for dusk in the summer to get your martini. Thankfully, it’s more of a winter drink.
Diet soda/tonic is the worse.
Agreed but Fever Tree Light is not diet. It has calories, carbs ect just half the amount.
Schweppes Zero it is not.
Tastes like diet. I only like the regular Fever Tree.
I suppose if Coke came out with Coke Light because it had 1/2 the sugar (or subbed with fructose) it might also taste like diet if one prefers the sweetness level.
That said it might also be preferable to some who would prefer not to have it be slightly more bitter. Fructose does clear the palate faster than sugar which coats it and protects from the lingering quinine. That certainly could be why as well.
Because, like @Tom_G_l_a_s_g_o_w , we think it tastes diet. It’s hollow and flat, to us. I will use Q if I am really watching calories. I may sometimes add just a splash of soda to take the edge off. But usually not.
I am a big fan. Juniper forward, but with plenty of citrus (orange peel, and lime) and spice, as well as some nice piney notes, and a touch of anise. It has an oily texture, that helps keep the finish very long, yet it is still fresh, and vibrant. I am not a big gin guy, but this is one of the few gins I can sip.
One of the few things I have liked more is Rochelt Annia’s Gin. Outrageously good, but also insanely expensive.
I’d never heard of it but does sound interesting being distilled from 10yr Apple brandy. Not a spirit for the Plebs.
How was the Procera pour, I’ve seen that one around but never ordered it?
The Procera Blue Dot was actually what the note was about. I am a big fan. I think the texture of it makes it worth the price difference compared to Monkey 47 to me, especially if you may sip it neat or even on the rocks with a big cube.
Thanks for the soda hack. I’ve been drinking gin, soda, and lime (a Rickey?) but I miss tonic. G & T now tastes too sweet. Half and half this afternoon/evening is perfect
