WSJ - Skip The Wine Pairing Menu

I can’t remember to put my pants on if I don’t write it down.

In my home town there is a restaurant that presents their wine recommendations separately before each dish and let’s you choose between having a glass, a half pour or not having at all. They also have a decent range of local craft beers if at some point the wine recommendation does not seem tempting. That said it’s a hipster kind of a joint that does not really have a proper wine list so on the other hand I don’t even know how ordering full bottles works there. Luckily they were pouring some nice wines when I visited like Texier Opale and a Niepoort Grüner from Austria.

When it’s done right, it can be fantastic, but it is very seldom done right.
