If there is one thing I trust less than tweets from [Name omitted to avoid another silly yellow card for illegal political commentary], it’s French agricultural shortage reports, but this seems real. i bought about a pound of seeds in the Fall, but maybe I should but more.
Mailles was selling out of its classic mustard from tap on our trip last week. Dijon and Paris location both selling out by 11AM-12PM. The truffled mustards were still available. After missing out in Dijon, we got some in Paris. The classic from tap was a bit spicier than the bottled.
Bit of a dumpster dive but I’d say that the Kozliks triple crunch is one of the better charcuterie plate mustards around for the exact reasons you gave. Plays well with cornichons and is mild enough to not overpower but add needed acidic zip to fatty meat and cheese.
When we were in Beaune a couple months ago, we did the mustard tour and came away with a bunch of the Moutard de Bourgogne, which we thought was much better than standard Dijon mustard.
