What to do with a beef loin roast... ??

I bought a whole beef loin from Costco last month and cut individual center-cut filets for a dinner. Now I have what’s left defrosting on my counter – the ‘butt end’ of the loin that’s about a pound by itself, and a few other random small pieces that couldn’t pass as a filet – so I’m not sure what to do with them. The butt end is usually cooked as a roast by itself, but this one is smaller than normal because I had use part of it to make an extra filet…

What would you do?? I have some great meat – just odd sizes… Kebobs? Filet Mignon stew?

Stew=Very Bad Idea.

Cube into uniform size and marinate for kebobs. Equal parts EVOO/Lime Juice/Dark Soy Sauce with some granulated garlic and sriracha hot sauce. Dry thouroughly before hitting the grill.

Alternatively, EVOO/Lemon Juice/White Wine/Fresh Garlic/Oregano/Salt/Pepper.

I do something very similar to Tex’s second suggestion, but with beer instead of white wine. Tenderloin makes delicious kebabs!

If you’re handy with a knife you can butterfly it out and make some more steaks.
