What do you do with your over the hill wine?

Pretty close to my experience of 25 years, for wines where I know where they’ve been. And some of the ones that seem OTH after a lot of air freshen up.

Oxidized to me has nothing to do with OTH, to me a wine that is oxidized had bad storage at some point or an off cork or something.

So I wouldn’t worry about it at all.

Also I expect your palate will change where some young wines will seem incomplete and not a good match with food.
