New Years Day
Black Eyes with snaps, braised cabbage, potato salad, baby backs and country corn bread.
Cabbage was the star. But the pork was pretty good too.
Seared off some Neah Bay rockfish in a butter/tallow mix. Rubbed it pretty aggressively with Spiva Seafood Seasoning, ancho chili and Lowry’s, spooning the fat wash on it while cooking.
Really, fish is healthy, right?
Ringing in the New Year with Black Eyed Peas and Roasted Pork Cap Medallions. Happy New Year Berserkers!
Pan seared with S&P in bacon grease, then rolled in a mix of fresh Sage, Rosemary and Thyme. Roasted to 135°. Black Eyed Peas with onion, celery, red bell pepper, garlic, brown rice, smoked paprika, cayenne, S&P, fresh thyme, veggie stock. Garnished with tomato and scallions.
Ham, white bean, kale soup. Leftovers from christmas, perfect for a rainy day, lots of leftovers.
Chef was lazy today. Local Smoked trout over potato & celeriac mash (w faint touch of roast coriander) and peas - with Manzanilla. The combination was lovely. Sometimes simple is what we need, especially after the festive season.
Sliced some prime grade ahi and brushed with soy, and made some spicy poke with the end pieces.
Soup with a broth of kelp, shaved bonito, ginger and green onion (strained), threw in some littleneck clams just until they opened and poached a small piece of chilean seabass in the finished broth and removed, then added some spinach and freshly shaved bonito and plated.
Cooked a simple, but nice and comforting dinner last night after a round of golf and a beer.

Sea salt, black pepper, scented with extra virgin olive oil infused with rosemary, garlic, bit of thyme and sage.
Linguine al tartufo.
Had a Caesar’s salad as well; but I didn’t make that.

Veal with mushroom demi-glace, pasta with peas and garlic. Melted zucchini and tomatoes. The salad was shaved fennel, grapefruit and a double cream feta.
Go post that on steak porn; you’re depriving the fan base of some great pics!!!

Braised veal shank over polenta and a chocolate burnt Basque Cheesecake. Perfect way to ring in the New Year.
Sesame crusted salmon, blistered broccoli, and jasmine rice with chunks of crystallized ginger & beni shoga (red pickled salted ginger).
There’s a dollop of chili crisp too!
Stuffed turkey breast with thyme, rosemary, sage and a little toasted garlic, and crusted with the same herbs on the bottom. Sous vide 145º for 2.5hrs and wrapped in the fridge overnight. In the oven cold out of the fridge about 475º until the skin looked good. Had with sauteed spinach and a chicken fat fried egg.
Skin looks really good! I need to try making this.
Last set of chops from the hazelnut-finished pig we picked up, rubbed with some Spiva Sweet Heat. I need to blow through a ham and a shoulder so I can buy another one!
Looks fantastic. I have some Ibérico pork chops that I now feel the need to cook.
