There is so much good wine coming out of Walla Walla that it’s hard to answer your question, but I’ll chime in with a few of my favorites. In addition to the ones on your list (nice list by the way) I’ll recommend the following:

Most of these have open tasting rooms at least on the weekends… Cayuse and Long Shadows I think are appt only, but K and Sleight have tasting hours. There are many othes worth at least visiting. Abeja is right near K- might as well go there as well. In the neighborhood of Rollat and Va Piano is Beresan and Pepper Bridge- both worth a taste.
I will throw Stephenson Cellars, Ash Hollow and Flying Trout into the mix.

I picked up a bottle of the Edoard to try… Tanzer did a tasting of his favorite washington wines out here last year and my brother attended. The Rollat wines were included- said the Edoard was really good.
I have tasted their Rose’s and find them boring and clumsy like most Washington Rose.

FYI- I think the JimGermanBar in Waitsburg is also worth a visit. Right next to the woop-em up cafe (or whatever it is called) which I think is drastically overrated.

I will also suggest a winery I happen to really like run by Charlie Hoppes is called Fidelitas. They make, IMVHO a really really good bottle of wine.
i will tell you it (the reds) CAN be ‘oaky’. charlie is moving away from that style each year (as vines age???) and he has a killer room on Red Mountain.
In fact, two days ago (as I’m on his list) I got an invite to his open house. I guess he put in a Bocci Ball field and it’s pretty open to the public. I think it’s worth a stop. It was, without a doubt, the best time I had in Walla walla at a winery and we spent a good amount of time at many places.
If you do get there - focus on his Syrah and Champoux cabs - my $.02 ymmv.
