Two Dauvissat Chablis

1) 2000 Chablis “Vaillons” (V. Dauvissat)
Rich, mature golden color.
Fine nose of green limes, grilled nuts and wax.
Firm, lemony fruit, which due to a slight lack of acid, is a tad flat.
Good quaffer but nothing special. Drink up.

2) 2005 Chablis “La Forest” (V. Dauvissat)
Light-medium yellow color.
Fine nose of lemon/lime, brine and ginger.
Rich, lemony/red grapefruit entry led to a very long, dry stoney finish.
Many layers of flavor and texture in this pup.
Drinking nicely now and for the next few years.

Thanks for the report, Paul. The 2005 vintage has been bad mouthed a fair amount, but I think it has come out of it’s funk over the past year or two. It is a little more burgundian than some people prefer, but hell, I like white burgs, too.
