Toulouse, Tarn & Aveyron

Planning a trip in June, in and out of Toulouse.
Will likely head across l’Herault, and up to Cyril Attrazic in Aumont-Aubrac, via Laguiole (been to Michel Bras years ago so likely just pass through), and Bozouls (have to after watching Sam Spade), staying at Emilie & Thomas in Conques-en-Rouergue, then on to Saint-Medard to Le Gindreau, and spend the weekend in TLS before flying home.
Was looking at GHO (Grand Hotel Opera) in centre of TLS.

Any recommendations for places to stay or eat in TLS or environs?

I absolutely loved eating at Cartouches in Toulouse and if you want something casual(but with a sneaky good and local wine list) Barbaque is also fantastic. Restaurant Emile is where you want to go for hyper classic Cassoulet and Au Pere Louis for traditional Southwest French cuisine in a more old-school and semi-casual place
