I would’ve expected more than 1/3 champagne in your cellar given how much you drink! Mine is ~45% champagne.
There’s definitely an imbalance, given how many bubbles we open compared to still wines. It has to be 10:1. I didn’t start my champagne deep dive until about a decade ago.

Curious which are your favorite Sottimano’s?
I’d say Cotta is my favorite. Fausoni would be next. I also find their Langhe Nebbiolo and Barbera d’alba to be excellent values. Have you tasted through the range?
Not yet but was curious because buying them now. Picked up a few cotta and one Fausoni. Thanks for your view!
Seems like Cotta consistently preferred by critics and cellar tracker but by only a slight margin
