And then vote on them. In any event…different strokes for different folks.
Some like to taste wines in its perfect form and other likes to taste wine with a small effect : for example, the 1999 La Tache.

Has it reach its maturity yet ?

If the wine group all decide it needs to wait for 2 years more.
OK, taste it again 2 years late.

After 2 year, all taste it again. All 3 said yes; and other 3 said : not yet, 1 of them said, needs 2 more years, …and so on.

All can start eating the Duck…but continue to discuss about it…and they all must give the reasons for their conclusion : why it is now mature and other must provide reason…why 2 years and not 4.

Wow, what an incredible evening and fantastic notes.

This is exactly how I imagine drinking and appreciating Burgundy when I finally grow up. Unfortunately I’m already on Medicare.

I’ll just wander back over to the Champagne thread. Not the 13-vintage Salon Champagne vertical thread; I doubt the bouncers would open the velvet rope there either. Just the regular Champagne thread with the rest of us bums. :joy:
