American oak and dill is a weird one. I bought maybe 15 bottles of 2010 LdH Cubillo. Of the 12 or so we’ve consumed, one, and only one, was pure pickle juice. According to the IDTT interview with Maria from LdH, they use very old, very large casks, only replacing single boards as necessary. It’s hard to imagine why that one bottle showed such strong dill character but others noted it as well.
