TN: Dauvissat Chablis Vaillons 1996

I don’t think one could ever confuse this wine with anything else if served blind. Screaming “CHABLIS”, this is my fourth bottle from a case I have bought about six months ago. So far, no hint of oxidation with any of the bottles, although one seemed to be a little more advanced than the others. Laser-like focus, pure, ripe but with perfect underlining acidity, bright, exuberant and simply delicious. Great match for grilled calamari with olive oil, a little lemon, parsley and sea salt. One of the bottles seemed a little more citrusy (lemon peel) than the others but overall this a superb, very tense but tasty Chablis for current consumption.

Good to see it wasn’t toast but Dauvissat '96’s I have had great luck with along with the Rav-man.

Yep…no issues with '96 Rav-man either…so far at least.
