Last night, I had the pleasure of splitting a bottle with the girlfriend while dining out at our favorite sushi joint. I’ve paired many a Champagne bottle with sushi before, but this was the first BdB. To say the wine paired perfectly with the raw seafood would almost be an understatement. At 16 years old, I was amazed at how much pressure was left behind the cork. The nose on this thing is still a baby–such zippy lemon, straw, and a hint of lightly buttered toast. Midway through our meal the chef comped us two pieces of pan seared white tuna with black sesame seeds. A minute after we had finished our tuna, a sip of the wine reinvigorated the lingering richness of the fish. The wine’s palate was focused on bright citrus, the aforementioned straw/grass, and a light butteriness that channels good white Burgundy. I’m sitting on my remaining bottles, as I don’t think they’re going downhill anytime soon. 92pts.
