my last bottle–a near legendary wine getting on in age–and certainly near its peak. The fill in the bottle was less than a cm from the cork, the bottle purchased in the early 90s and stored well. It is a wine of high-toned blue and black fruits, super acidity providing brightness and with lovely balance. I love the length–an endless finish that resonates. The nose is regal, complex and full of spice that is echoed on the palate. As it sits in the glass, it gains in power and depth. I like this Burgundy. When I taste these patiently aged and well-stored bottles that offer so much more than the embryonic bottles all too often opened, I am reassured that it is right to wait.
