On pop n pour the nose was shy and the palate a bit disjointed so I let the glass sit. At the 2+ hour mark the violet florals of Mourvèdre blossomed on the nose, the palate expanded with boysenberry fruit, some gaminess and a real chalky finish. Enjoyed another glass after dinner and recorked. The next morning it’s holding up fine, the chalkiness has become more chewy but there’s a bit of bitterness surrounding the palate that prevents it from softening. Will this pass with more age? Hard to say, but based on this experience you should be in no hurry to dispense of these bottles.
