TN: 2012 Enfield Wine Co. Cabernet Sauvignon

2012 Enfield Wine Co. Cabernet Sauvignon - USA, California, Sonoma County, Fort Ross - Seaview (4/17/2016)
I did not decant this, so it was a bit sullen for the first hour, but after it got some air it started to show off. Deep plum and blackberry fruit is surrounded by firm tannins and a finishing shot of smoky/spicy licorice. There is a lingering note of berry fruit with just a hint of rosemary. Swish it around too much in the mouth and the tannins really clamp down. Medium bodied and moderate (13%) in alcohol, this seems to have stuffing for several years of aging to soften the tannins.

I put a note up here somewhere about this 12 Ft Ross Cab. Needs time IMO.

I agree that it needs time to address the tannins.

Thanks for the note, David!

Of all the wines being produced in the Sonoma Coast area, this wine is the most fascinating (in theory) to me. So, it is made of sufficiently ripened grapes, albeit tannic…

Wine was just tight and we uncorked it 24h in advance. Thinking holiday season 2020 for bottle #2.
