    Over two days
    Immediate blast of Oregon Cristom funk on the nose with dark cherry, forest mushroom and a hit of clove. Rich mouthfeel with nice acid to tannin balance and a cool miso/soy quality with lingering creosote smokiness. On the second day the flavors have integrated even better. Even young, this is beautiful and a great foil to a rich mushroom risotto.
