Got a chance to taste this Tuesday for the first time since it finished fermentation. I made my wine at Judd’s Hill where Black Cat is made in 2007 and got to try the grapes as they came in and as the wine fermented. I remember giving her some crap for picking on August 31st. Yea, that’s right…she picked in August. Well, looks like she has the last laugh, and it is just more evidence for what I have come to learn in 4 vintages here… if you have a really good vineyard, you can make wine in many different ways and still be successful. Her little vineyard is off Pickett Road, within sight of Eisele and Kennefick. If you have liked this wine before, you will be very pleased with the 07.
2007 Black Cat Cabernet Sauvignon, Napa Valley, $60? (futures)
Deep ruby color. Medium to medium-full body. Moderate tannins. Very nice aromas of red cherry and some currant with just a slight touch of spice. A surprising lack of green-ness given her pick date. Good texture and balance. Very drinkable right out of the bottle and should go another 5-6 years easy. Went really well with roasted stuffed chicken. Easily the best Black Cat ever. A good choice for drinking while some of the bigger, riper 07 Cabs mellow.
