2007 Domaine William Fèvre Chablis Grand Cru Les Preuses - France, Burgundy, Chablis, Chablis Grand Cru (3/9/2012)
Excellent. Opened a full day back and left in the bottle, this was still young but very impressive indeed. It showed a beguiling Chablis nose of wet stone and earth, mineral and seashell, even a bit of beeswax, along with subtle red apple and lemon scents. This had opened up very nicely since the last bottle I drank about two years back. The palate also showed quite a bit better than the last outing. This was classic Preuses: absolutely clean, precise and focused, with an almost laser-liked defintion to its white fleshed flavours - apples again, green Granny Smiths this time, with more ripe lemony accents at the edges and just the tiniest hint of gingery spice. Lovely. From the midpalate on, the entire package was underscored by a tremendous flow of chalky, stony minerality that coated every crevice of the mouth as the wine pulled away into a long, incredibly insistent finish. This just about that captured every taste receptor on the back-palate and refused to let go. Not quite raw power I would say, but this was quietly deep, with an immense sense of presence that crept up on you. It was very subtle though, never shouting, and such was the super fresh and citrussy youthfulness of the wine that one could almost miss how much was going on beneath the surface. I got nothing more than a glimpse of the potential of this wine in the last bottle we had. This time round, this bottle really gave a sense of what a great Chablis it really is. A superb wine. It was lovely to drink with some sushi over lunch at Kingyo even now, but I think it will be truly great in 5 to 6 years time. (93 pts.)
