TN: 2007 Domaine François Cotat (Paul & François) Sancerre La Grande Côte

The nose didn’t give up much initially. After an hour it really opened up with honey and grapefruit. Very much a mineral driven well-balanced wine. Nice acidity, but not overpowering. I like this wine for many of the same reasons I like a good chablis. Paired very nicely with pan seared grouper in a light cream sauce. My first experience with any vintage of this wine. Very impressive and sure to improve.

Your notes jive consistently with older vintages at this stage in it’s life cycle. This stuff really kicks at 5 to 6 years past vintage.
