2007 Château Thivin Côte de Brouilly - A really good bottle of wine! Tight and closed at first it opened up nicely after a few hours in a wide-bottom decanter. Floral and mineral aromatics with a touch of background earth. Great acid with sappy and spicey dark fruit flavors. Long finish with more spicey fruit. I like it alot more than the notes I saw on cellar tracker.
We are doing a 2007 Beaujolais tasting soon. Hope this is representative of the vintage.
Had the 06 last Saturday with fried clams of all things, was tight at first as well (though it could have been the resto glasses, which were cab).
When I brought half the bottle home and poured into burg glasses - it blossomed. Didn’t get the sappy fruit you got, but lots of ripe, sweet fruits, spice and feminine aromatics.
