TN: 2007 Cabot Vineyards Syrah Kimberly's (USA, California, North Coast, Humboldt County)

What a great deal from Cabot for BerserkerDay. This is an excellent wine that obviously has a long time to go. We opened the bottle on Tuesday and it was very nice. Smooth, pure and a bit of fruit. Recorked and put in the refrigerator and reopened on Friday. It has really blossomed. Pepper, black berries, plums, some bacon fat, and a strong acid backbone. Even a bit of chocolate. It retains its smoothness and purity. Moderate finish, Dark red color. Nose is a bit on the light side. (90 pts.)

I had the 07 Syrah Humboldt County tonight. Their wines are just wonderful QPRs.

thanks for the TNs! Have both of these, will have to try them soon.

Popped one tonight and boy is this meaty goodness! Blackberries spicy plum meat very smooth and silky, hints of bacon. Juicy acidity some tart fruit with some grippy tannin and rockin with a ribeye. Great food wine, decanted about 3 hours. Still tastes young IMO I need to buy more Cabot wines.
