TN: 2007 Cabot Vineyards Syrah Humboldt County

  • 2007 Cabot Vineyards Syrah Humboldt County - USA, California, North Coast, Humboldt County (7/26/2013)
    Inky dark purple, ruby. Cedar, plum nose. Bone dry, what strikes initially is the strong acidic tannins and cola, some red meat. On day two, black pepper showing, chewy mouthfeel with prevalent heat. Not quite restrained yet, but moving in that direction. I would give some more bottle age for the rough edges to smooth out. Here we are on night three with grilled chicken, summer squash, zucchini and rice. Simply great food wine! My recommendation is drink while you eat, or eat while you drink! Both work equally well. 90 on it’s own, 92 with food. Much more subtle and restrained than the '06 Syrahs. I love it. (92 pts.)

I need to check in on one of these soon. They were insane last year but I can say there is a bit of bottle variation, where some are ready to roll right away and others need time. When it is on, oh baby is it on. Glad I slowly collected a modest stash.
