Best cabernet I have enjoyed this year. raspberry liquor with perfectly integrated tannins, smooth and velvety feel, and a beautiful, elegant structure. Seamless. (95 pts.)
Enjoyed at eleven madison park with bouillabaisse, spaetzel and rabbit (awesome dish), poached lobster, and beef tenderloin with marrow crust. Delicious.
Opened at the restaurant, placed in the decanter and really developed after one hour.
Drunk over 2 1/2 hours.
I think a 1-2 hour decant should be fine.
I only have one or i would throw it into the big napa cab smackdown im going to tomorrow night. i’d rather have it sleep for a while before I liberate it. Thanks for the note!
I slow ox’ed one of these for 12 hours back in the early summer and was equally amazed. Got a pretty good dose of cocoa too, which worked well with a rich chocolate dessert.
After the new year when things settle down for you a bit, let’s crack one of mine to satisfy my curiosity and help protect your lone bottle. Then we can chime in on this thread with actual tasting notes.
For me, tomorrow is going to be a steady stream of mature Alsatian whites and red Bordeaux.
