    Somehow this was my first experience with this wine after having multiple bottles of most of the Cabot lineup. Opened and decanted for 2 hours, Still pretty tight initially and didn’t really open up till the 3 hour mark. Nice blue/black fruits that are more in the backround with smoky ham and olives leading the way. Very structured still on the finish with chalky tannins. After being opened for about 6 hours it really hit it’s stride. Very nice wine that I feel still needs another year. Decant for a few hours if opening now.

I did have one bottle of the “one Barrel” sometime last year, but didn’t take any notes for some reason. The '06 Aria’s has been my favorite Cabot to date. Kimberly’s reminded me a lot of the Aria’s just a little tighter and chalkier.

Cool. I, too, liked the Aria’s, but still prefer the '06 Kimberly’s over it but just a hair.

I cannot wait to try my first Cabot wine. This will be happening shortly as I am having a shitload of the wines I have ordered over the last 6 months delivered this week!!

I think your description is spot on for this wine. I was lucky enough to spend some time with the Cabots this weekend, and some of the things I liked about this wine while tasting it at the Humboldt wine university was its vibrant acidity, and the flavors you described so well. Jim

P&p. Watching the Stanley cup finals. Very impressive and expressive nose. Not as much piggy as I remember, but it’s still present. Purfumey, also Lots of charcoal, dark fruit, coffee, stems,and some evergreen. On the palate it starts out with dark fruit and raspberry that’s deep but not over ripe, a dollop of “mrs butterworths”, and a touch of green pepper. It moves nicely into a briny finish with some coffee/cocoa touches. The finish lingers. Excellent stuff from John & Kimberly. unreal qpr. (92pts)

I haven’t cracked one of these in a while. These notes make me want to fire up the Big Green Egg, grill some meat and drink some Cabot. [berserker.gif]

I’ve noticed some variation in the tasting notes regarding the amount of pig. I personally haven’t experienced it myself, always a good dose but I’m looking for it.

Wish I had doubled down on my last order.

I’m enjoying one of these tonight - down to 3 after this…sad.

Still one of my favorites - this with '07 Confluence and I could buy two wines for all the truly enjoyable everyday drinking I’d ever want. Fantastic with food, and on their own.

Darned good wine. For me the 2006 Aria’s is at a slightly more pleasurable place right now, but I have no doubt the Kimberly’s will only get better and better. These wines are so satisfying with or after a meal with savory and acid as the dominant elements and then always such purity of fruit as the back note. When is the next order form coming out? I really need to put more of these wines in my cellar so that I feel less guilty when I rip Cabot corks!

Agree with everyone that the Cabot wines are truly impressive. the 07 Confluence I opened a few weeks ago was WOTN for the crowd. Impressive depth and balance. Intriguing spicy finish. Seductive nose. Wish I had more!
