TN: 2005 Fevre Chablis Les Preuses

Light yellow gold in the glass - bone dry on the nose, with hints of salinity and a nuance of oak. Somewhat austere on the palate; pleasant enough, but off tonight’s showing I’d say this wine is at least five years too young (at least that’s when I will be trying my next bottle).

Thanks for the note. Can I send you a pm in 5 years, when I am thinking of cracking my first, or would it be more courteous and appropriate of me to give you a heads up in five years that I am going to crack and post? :wink: BTW what your feeling on the acidity/balance?

I have been disappointed, certainly vs. the cost and past bottles with the 05’s I have tried by this producer. Perhaps they will come around, I am not sure. Time will tell.

Well, with the admitted caveat that I think to some degree everyone guesses at where a wine will eventually end up, I do think that this wine has the requisite raw materials to develop favorably in the future. In other words, I wasn’t worried about the quality in the bottle. That said, if we just stick with vintage, in terms of “baby wines”, I liked the infantile Raveneau Butteaux in '05 a lot more than this wine from Fevre.

I actually broke out another bottle of this wine last night (so much for waiting five years [pwn.gif] ), and with the caveat that you never know how bottle variation impacts a wine, I was much happier “one year later”. This is still drinking as a very young wine, but I could also see someone pulling a cork and enjoying the way the wine shows now. It has pulled together and lost that touch of austerity I mentioned last August, and while the nose is still reticent, the fruit & acidity are now harmonious on the palate. Tasty, if still an infant.

We had a mag of this on Saturday evening, and it was fantastic. I left before the rest of the group, however, tried it after 5 hours of being open, and apparently it killed after all that time.

I picked up the 2007 from Brocard last week, plan to open it this Saturday, along with the 2008 Servin M d T. I’ll put some notes up on Sunday. Given your comments, perhaps too soon to drink the Les Preuses but we’ll do it anyway.
