A very nice wine but not profound. For my palate, Dauvissat’s leaner style works beautifully with the 2005 vintage, and the La Forest is working pretty well right now, but it’s not great. Opened, poured a glass which was a little lean. Left it uncorked and followed it for a couple of hours. On the nose, lemon curd, green apple, chalk, fresh cut grass. In the mouth, nice acidity but not as taut as I’d hope. Not as minerally either. Anyway, a very good wine – especially with saffron rice, grilled corn on the cob, and grilled shrimp – but not a great wine. I’d say it needs more time, but I think it falls short because it lacks some acidity and minerality that I look and hope for in Chablis. So, who knows? Any thoughts on this thing?

it’s a nice wine but I doubt one for the long run. A 2002 Forest lately was already very ripe and the 2005 is from a vintage with lower acidity. In the last years I’m really contemplating what has changed in Dauvissats wines as they seem to have lesser structure and backbone perhaps to gain an earlier accessibility.

That’s quite surprising to me. I would think that wine would be in a much better phase at this point. I’ve not had that vineyard but I’ve loved the 2005 Dauvissat’s that I’ve tried.
Phil – I was a little surprised too, though perhaps it’s the La Forest vineyard that’s a little soft in Dauvissat’s 2005 lineup. The first I’ve had of that bottle. Not a bad wine by any stretch, just lacking a little acidity and structure for my taste.

i just picked up some 07s. any word on that vintage?
Mike – Based on one bottle tasted earlier this year I’d say the '07s should be spectacular. I included my note below.
David – We’re having the '05 Dauvissat Les Vaillons at a small tasting tonight. I’m really looking forward to trying it and am hopeful it shows better than your “La Forest.”

Wednesday Night Burgs: One of Craig’s contribution and this was extraordinary. Soaring nose dominated by citrus fruits but delivering layers of complexity. Even better in the mouth with a steely, jazzy personality. Concentrated, mouth-coating fruit balanced deftly by structure/acidity. Flavors really ping the taste buds and the finish seems to go on forever. For me this was WOTN and one I will need to seek out. (97 pts.)

thanks dave, that clos sounds spectacular! ive heard good things about 07 whites so i jumped on in. i dont think i can get, or afford, the clos. the 1er will have to do!
